Cauliflower Mash w/Spinach & Mushrooms

We have started getting a farm bag from https://www.localfarefarmbagsouth.com/ Oh. My. Heavens. I LOVE IT!!! This week we got 2 heads of cauliflower and I found a recipe online and tweaked it to our liking. This is a keeper!!


Cauliflower Mash w/Spinach & Mushrooms

Cauliflower Mash w/Spinach & Mushrooms

Ingredients

    Cauliflower Mash:
  • 1 large head of cauliflower, cut into florets
  • 1 heaping Tbsp nutritional yeast
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground pepper
  • 1/2 tsp garlic powder
  • 1/2 cup unsweetened almond milk
    Veggie Topping:
  • 1 Tbsp sesame oil
  • 2 shallots, finely diced
  • 16 oz sliced baby bella or white mushrooms
  • 1 Tbsp soy sauce
  • 1/2 tsp garlic powder
  • 2 big handfuls of baby spinach (about 1/2 a 6 oz bag)

Instructions

    Make the cauliflower mash:
  1. Boil the cauliflower for 7-8 minutes until soft.
  2. Drain and place into a food processor or fancy hardcore blender with nutritional yeast, salt, pepper, garlic powder, and almond milk.
  3. Blend until smooth.
    Make the Veggie Topping:
  1. In a large skillet, add the sesame oil over medium-high heat.
  2. Add the shallots and mushrooms, sauteeing for 10 minutes (stir occasionally!) until soft.
  3. Add the soy sauce, garlic powder, and spinach, stirring for 2-3 minutes until the spinach is wilted.
  4. Serve the spinach & mushrooms over the cauliflower puree and enjoy!

Well, hello there

I got frustrated with my last web host. I moved my blog. I lost all my posts! GOOD TIMES!! So we will start fresh. I paid for 1 year and so we will see how this goes. I like blogging, just don’t do it enough! I will try to type up some old favorites to get it started, otherwise it’s fresh content from here on out.
